Recipe

I wanted to share a great recipe with everyone. I had it the other night and it was delicious!

Rachael Ray Dish

INGREDIENTS
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Serve with:
Crusty bread, for passing

Heat a large skillet over moderate heat. Add oil, butter, garlic and shallots. Gently sauté shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan (3 turns around the pan in a steady stream will equal about 1 cup). Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Well it has been a long two weeks at work. Last week I worked late on Thursday and had to work on Saturday for two job fairs. So I cannot report anything fun last weekend. I was laying low and trying to get some sleep. This weekend should be better and I will take some pictures to post.

Last night I decided to go out to a place called Nikki Marina for a little while with Danielle. The was something by ESPN going on...I looked but no Jeremy Shockey sighting. He is in town working out at University of Miami (my spies have heard of a sighting) so my hope is that soon I will see him. Speaking of University of Miami, I will be attending a baseball game tonight (against Clemson) and then off to the Hard Rock. I believe I will be heading to the piano bar (they have dual piano playing battles, it is fun to watch), then maybe some dancing or I might even attempt the bull again (we will see where the night leads), then tomorrow night either South Beach or Fort Lauderdale (something new on the list that we want to try out).

March of Dimes

I will be walking for the March of Dimes on April 29 down in Key Biscayne. This is a 5 mile walk. If you do not know what it is for, it is to raise money for premature babies. Tennis Anyone

I am sorry I did not post my pictures last night but I have a good excuse for it! I got invited to go to the NASDAQ-100 Open. Danielle got some tickets from work. The seats and parking were unbelievable. We felt like VIPs....got to love the box seating and parking right across from the entrance. I did take some pictures last night but got home too late to post them. I did not know the players but there were some great matches, especially the men. At the stadium we saw Shuai Peng (China) defeat Amy Frazier (USA) 6-4,6-2....then we went to the Grandstand and saw a great match where Stanislas Wawinka (SUI) defeated Andy Murray (GBR) 7-5,3-6,6-4, then the final match we saw was Xavier Malisse (BEL) defeat Nicolas Lapentti (ECU) 3-6,6-3,6-0. It was great! Keep an eye out for all the pictures to be posted.

7 Months Already

Well I cannot believe I have lived in Florida for 7 months. I wanted to start this blog to share with you what I have been doing down in Florida. I have had some great experiences so far. I have met some new friends and even gone out on a couple of dates (no Mr. Right yet but I did find a Mr. Stalker, he is gone now....).

I have experienced 3 major hurricanes: Katrina, Rita, and of course the dreaded Wilma. Wilma was the worst down here. I will post the aftermath pictures tonight. I was out of power, out of cable, and out of work for 1 week (the power only 2 days). I think the only good thing about Wilma was that I met my friend Danielle.

Some of the things that I have done in these 7 months are gone to the VMAs, some opening nights including Grease (of course you all know it is one of my favorites) and Breaking Up is Hard to Do (got to accept the plaque for Comcast and got my picture taken...I felt famous), the Food and Wine Festival (will post some pictures of Rachel Ray and Tyler Florence), saw a great University of Miami basketball game vs North Carolina (thanks Danielle), been to a Panthers game in the Comcast box (that was nice), been to the ballet (it was in Spanish so I did not understand but it was beautiful), and even ridden a bull......

I have also had some visitors. First there were Kate and Carey (will post some pictures girls from the PorterHouse), then came my parents, followed by Aunt Nora, Uncle Ed, Michael, and Corey (even got to see the boys play some baseball in West Palm Beach, they were awesome), got to also visit with Aunt Mary and Uncle Tip (saw Usher at the restaurant we went to), and the last visit was Jay. I love the company so if you want to take a trip or in town the door is always open.
